Yummy crispy bacon and cheddar cheese muffins!
This is the easiest recipe I have on my blog – by far!
Let’s get started!
250 g bacon, fried and cut into small pieces
250 g Cheddar cheese, grated
2 cups flour
2 teaspoons baking powder
1/2 cup cooking oil
3/4 cup milk
pinch of salt
some garlic and herb spice
1/4 cup sugar
2 eggs, whisked
Preheat the oven to 180 degrees Celsius. Grease a muffin tin. Quickly mix all the ingredients together in a mixing bowl. Do not over mix!
Put spoons-fulls (3/4 full) in each muffin tin. Bake for 25 – 30 minutes.
Enjoy warm with some butter if you prefer. And then have another one.
Rainbows all around! This is what you need…
For the cake:
120 g butter
1 and a half cups sugar
7/8 cup milk
1 teaspoon vanilla extract
4 teaspoons baking powder
2 and a half cups cake flour
pinch of salt
food colourants: red, yellow, blue and green
For the icing:
200 g butter
1 and a half cups icing sugar
vanilla extract/ essence or caramel essence
2 tablespoons cocoa powder
(Mix the butter or margarine with a hand mixer. Sift the icing sugar into the mixture, add the essence and cocoa or a colourant. Mix well).
Let’s bake a rainbow cake – these are the steps…
Preheat the oven to 180 degrees Celsius. Grease a big cake pan – I used a round one. In a large mixing bowl, cream the butter and the sugar. Add the essence. Add the eggs, one at a time, mixing well each time. Sift the dry ingredients, bit by bit, into the mixture in turn with the milk while mixing with an electric hand mixer.
Divide the mixture into 4 equal parts in 4 bowls. Add a teaspoon of each colour to each of the bowls. Thoroughly mix the colour into the mixture.
Now, take your greased pan and fill the pan, layer by layer, with the 4 colours. Try to thoroughly cover each colour mixture with the next one. (Depending on the result you want).
Bake for about 30 minutes. When the cake has come loose from the pan it should be ready. Remember to use a sharp knife or cake tester to test if the dough is ready by sticking it into the center of the cake. When it comes out clean – with no dough, it is ready and can be taken out of the oven.
Take the cake out of the oven and let it rest for 5 minutes. Then take it out of the pan and cool further before covering it with your icing and for further decorating.
