This is the only hummus recipe you need. Easy, delicious hummus.
Enjoy hummus on bread, crackers, with veggie sticks or in a sauce.

Ingredients
2 garlic cloves, finely cut
1 tin, 400 g chickpeas
1 teaspoon cumin
4 tablespoons olive oil
salt and pepper
2 tablespoons Tahini
2 tablespoons lemon juice
paprika spice to serve

Method
Blend until smooth and enjoy.
Add some water or more olive oil if it is too dry.

Sweet Engagement Cupcakes

I Had a lot of fun baking my own engagement party cupcakes – you can too!

Here is an easy recipe for you to make your own engagement themed cupcakes!

Ingredients
2 cups cake flour
2 tsp baking powder
half a cup of castor sugar
pinch of salt
2 eggs
half a cup oil
half a cup milk
1 tsp vanilla essence

For the icing
2 cups icing sugar
200g butter
pink and blue food colouring
1-2 tsp depending on the shade of coulour you want
(powder or liquid)
1 tsp water

DIY Ring decoration
You will need a few toothpicks and printed and cut out pictures of a ring. Use glue to stick a ring picture onto each toothpick. Let dry for a few minutes.

Method
In a mixing bowl, beat the eggs, oil, milk and vanilla together. In a separate bowl, sift the flour, baking powder, salt and sugar together. When finished, sift the dry ingredients again, into the the bowl with the egg mixture. Fold/mix the dry ingredients into the wet ingredients until all the flour is mixed into the egg mixture – be careful not to over-mix!

Get a muffin tin and put in the muffin casings. Then use a big spoon and a butter knife to spoon spoons-fulls of mixture into the casings to make them three-quarters full.
Bake for 15-20 minutes on 180 degrees Celsius.

Put on a cooling rack to cool.

In a mixing bowl, beat the butter for the icing until creamy. Sift the icing sugar into the butter and mix with a hand blender until combined.

Divide the creamy butter-icing mixture into 2 bowls. Add the pink food colouring to the one and the blue colouring to the other bowl. Mix until you have the perfect colour – or add even more colouring if you’re not satifsied with the colour.

Use a knife to spread one colour of creamy icing on each cupcake.

Take a toothpick with a ring that you prepared earlier and stick it into the cupcake.

Mussel and Calamari Coriander Canapes

A creative summer canapé. Collect and wash shells from the beach to create this easy but creative canapé.

Ingredients
200 g mussels
200 g baby calamari
1 onion
some black pepper
some salt
fresh coriander leaves for garnish
a squeeze of lemon juice
1 tbs butter
fresh cucumber slices

Method
In a frying pan, fry the chopped onions in butter for about a minute. Add the mussels and calamari. Also add the spices and lemon juice. Fry for 5 minutes.

Prepare your shells.  Add some cucumber to the shells, then fill them with the mussel and calamari mix. Round off with some fresh coriander and some more lemon juice to taste.

Tasty bbq snack to be enjoyed with sunny weather.

Ingredients:
200 g chicken breast
half a red pepper
half a green pepper
one medium sized onion
1 tin pineapple pieces
1 carrot

some kebab skewers(+-10)

For the marinade:
half a cup soy sauce
the liquid/juice from the pineapple tin
14 inch piece ginger – cut into pieces
one garlic clove
half a tsp coriander spice
half a tsp cumin spice
half a tsp salt
half a tsp pepper
a sprig of thyme

Method:
Start by making the marinade. Cut the ginger and garlic into small pieces. Put the ginger and garlic in a bowl together with the soy sauce, thyme and all the dry spices. Cut the chicken into small pieces to fit onto the skewers. Let the chicken marinade for about 30 minutes or longer.

Now cut the veggies into small pieces to fit unto the skewers with the chicken. Thread pieces of chicken, onion, carrot, pepper and pineapple unto the skewers, leaving a bit of space open on each end as to prevent some pieces from falling off.

Cook on your grill or open fire on medium heat for about 20 minutes or until chicken and veggies are cooked and a little bit blackened from the fire.

Enjoy with some sweet chili sauce on the side.

A Plain Chocolate Cake

Here is an easy recipe for a yummy double chocolate cake!

Ingredients
60 ml cocoa powder
90 ml hot water
5 ml vanilla essence
300 ml cake flour
60 ml sunflower oil
3 large eggs, separated
about 80 ml water
125 ml sugar
extra 80 ml sugar
10 ml baking powder
pinch of salt

For the icing
100 g butter
350 ml icing sugar
50 ml cocoa powder
about 40 ml water to mix

Method
Preheat the oven to 180 degrees Celsius.

Mix the cocoa and the hot water. Let cool. Sift the dry ingredients into a bowl. Make a well in the centre of the dry ingredients, add the egg yolks, oil, vanilla and the cooled down cocoa mixture. Beat the egg whites until stiff, gradually adding the extra sugar. Fold this into the chocolate mixture.

Spoon the batter into 2 greased/lined pans or in one big cake pan and bake for about 30 minutes.

When cooled down, remove from pans. Mix the ingredients for the icing together and spread gradually over the cooled cake.

Decorate with  silver sugar sprinkles or any other decorating sprinkles.

Quick and easy pizza recipe for you to make and enjoy!

Ingredients
For the dough:
half a cup self raising flour
pinch of salt
1 sachet yeast
1 cup lukewarm water

For the topping:
1-2 cups grated cheddar/ Mozzarella cheese
1 sachet tomato paste
dried garlic, oregano and Italian spices
2 fresh tomatoes, sliced
1 green pepper, sliced
1 cup/ 200 g fried chicken pieces
1 cup mushrooms, sliced

Method
In a mixing bowl, add the flour, yeast, lukewarm water and salt. Combine and mix well. Knead for about 5 minutes. Put the dough in a bowl oiled with olive oil. Cover with a damp cloth. Let stand in a warm place for half an hour or longer.

Roll out the dough for 1 big or 2 medium sized pizzas on a lightly floured surface. Roll as thick/ thin as desired.  Mix tomato paste with the dried spices. Spread the mix over the base(s). (Add tomato sauce if the sauce is not enough to cover the whole pizza base).

Decorate the pizzas with the tomato slices, mushrooms, pepper slices and chicken pieces. The chicken can be replaced by salami etc.

Cover the toppings with the grated cheese and bake for 15 – 20 minutes at 200 degrees Celsius.
