Vietnamese beef pho recipe

This extraordinary dish includes even more spices and interesting flavours than my last recipe!

Ingredients:

400g ground beef
1 onion
1 sprig spring onion
2 cups chopped bok choy leaves
6 medium sized button mushrooms, cut into pieces
Mint leaves for garnish
Basil leaves for garnish
2-3 portions of Chinese egg noodles
2-3 cups beef broth
5 Star anise
1 teaspoon Coriander seeds
3 tablespoons Fish sauce
2 teaspoons Salt
1 teaspoon Pepper
6 Crushed cardamom pods
1 chili without seeds
1 tablespoon Ground Cinnamon
14 inch piece ginger – cut into pieces

Method:

Sear the beef in a pan on high heat. Add some salt and pepper. Cook for 5 minutes until browned – turning from side to side. Add ginger, chili and onions. Cook for a further 2 minutes. Now add 2-3 cups beef broth, depending on how saucy you want it. Add the cardamom and coriander seeds, cinnamon, the rest of the salt and pepper, fish sauce and star anise and cook on medium heat for at least 20 minutes. Then, last but not least, add the bok choi and mushrooms and cook for about 5 minutes. Cook the noodles as instructed. Remember to take out the star anise and cardamom pods before you serve! Get your soup bowls ready – dish up the noodles first and then add the spicy brothy mixture. Garnish with basil and mint leaves. Enjoy!
Tip: The star anise and cardamom pods (and cinnamon pod instead of ground cinnamon) can be put into a bag/herb sachet when cooking and removed before serving.

Homemade Ravioli

ravioliIt’s easy to make your own ravioli!

Ingredients
1 cup flour
pinch of salt
some pepper
2 eggs
some olive oil
150 – 200 g broccoli
half a cup feta
1 clove garlic
some rosemary spice
1 tin tomatoes for a sauce

Method
In a mixing bowl, add the flour, salt eggs and olive oil. Knead until the dough is smooth and refrigerate, wrapped in cling film, for 30 minutes.

Meanwhile prepare the filling. Add the garlic, salt, pepper and rosemary spice to a heated pan with some olive oil. Fry for 2 minutes on medium heat. Add the finely chopped broccoli and steam, covered with a lid, for about 5 – 8 minutes. Let the filling mixture cool down a bit if you like and mix with the feta.

Get the dough from the fridge. Cut the dough in half and roll the 2 balls of dough out on a lightly floured surface.  roll out as thinly as possible!
Put teaspoon-fulls of the filling on the dough, leaving gaps in between of the same size.

When all the filling has been used – cover with the 2nd piece of dough. then, cut along each spinach and feta patch to make a square. Press down hard on the edges – use a fork to press the 2 pieces of dough tightly together.

Now, boil water in a pot. Add some salt to the water. When the water is boiling, add the ravioli squares to the water. Cook for 5 minutes or until they rise to the top to float.

Take them out with a slotted spoon. Serve hot with some tomato sauce and some grated cheese.

Quick and easy pizza recipe for you to make and enjoy!

Ingredients
For the dough:
half a cup self raising flour
pinch of salt
1 sachet yeast
1 cup lukewarm water

For the topping:
1-2 cups grated cheddar/ Mozzarella cheese
1 sachet tomato paste
dried garlic, oregano and Italian spices
2 fresh tomatoes, sliced
1 green pepper, sliced
1 cup/ 200 g fried chicken pieces
1 cup mushrooms, sliced

Method
In a mixing bowl, add the flour, yeast, lukewarm water and salt. Combine and mix well. Knead for about 5 minutes. Put the dough in a bowl oiled with olive oil. Cover with a damp cloth. Let stand in a warm place for half an hour or longer.

Roll out the dough for 1 big or 2 medium sized pizzas on a lightly floured surface. Roll as thick/ thin as desired.  Mix tomato paste with the dried spices. Spread the mix over the base(s). (Add tomato sauce if the sauce is not enough to cover the whole pizza base).

Decorate the pizzas with the tomato slices, mushrooms, pepper slices and chicken pieces. The chicken can be replaced by salami etc.

Cover the toppings with the grated cheese and bake for 15 – 20 minutes at 200 degrees Celsius.

Bacon & Egg baskets

It’s brunch time!
Here’s how to make easy breakfast baskets…

Ingredients
4 – 6 eggs
1 spring onion, sliced
4 – 6 slices or rye/ wholewheat bread
200 / 250 g fried bacon strips
half a cup cheddar cheese
1 – 2 tomatoes, sliced
salt and pepper
fresh rocket leaves

Method
Preheat the oven to 180 degrees Celsius and grease a muffin tin. Place a slice of bread in each cup – fill the sides and the bottom completely to form a basket.
Break one egg into each cup. Add bacon, onion, tomato and cheese to each cup. Sprinkle with some salt and pepper.

Bake for 15 – 20 minutes or until the cheese has melted. Serve with fresh rocket leaves for a bit of green colour.
